Dal Vada….. with a healthy twist!

Crispy on the outside, soft and ‘melt in your mouth good’ inside, these vegetarian, gluten free  Dal Vadas, with corn and avocado, are not deep fried either!

Dal Vadas are rich in protein and a great gluten free snack. They are typically made with chana dal or yellow split peas and spices. I love how the flavor of sweet corn compliments the astringent dal, so I added corn to the mix.

Traditionally Dal Vadas are deep fried and best when eaten hot out of the fryer. When they cool down, the texture changes dramatically and they taste very dry.

That is why I thought of adding avocado to the mix! The healthy avocado also makes these vadas soft and buttery on the inside.  Plus, making them in the aape pan with just a couple of drops of olive oil made them crisp on the outside, without the deep frying.

We have had cold , damp and rainy weather for the past two weeks now and these warm , crisp and luscious Dal Vadas, served with the avocado chutney, have certainly brightened our drab days 🙂

Dal Vadas....with a healthy twist

  • Servings: 18~20

Ingredients-

  • ½ cup chana dal or yellow split peas
  • 2 cloves of garlic
  • 2 dried red chilies (or to taste)
  • 1 teaspoon cumin seeds
  • ½ teaspoon turmeric powder
  • ½ cup  fresh steamed or defrosted corn kernels
  • ½ avocado, peeled, pitted and chopped
  • Sea salt to taste
  • Olive oil

To make the Dal Vadas-

  1. Wash the chana dal with several changes of water and drain. Soak in fresh water for about 4 hours. Drain reserving about ¼ cup of the water. Grind the chana dal, garlic, chilies and cumin seeds, using only as much water as needed to grind the dal and spices coarsely.
  2. Add the corn kernels, avocado and salt. Mix well.
  3. Heat the appe/abelskiever pan over medium heat. Add a drop of oil in each indentation and immediately top it with the chana dal batter. Add a couple of drops of oil around the side of each indentation. Reduce heat to low and cover.
  4. Let them cook for about 3~4 minutes or until golden brown. Turn them in the pan, cover and let them cook on the other side for about 2 minutes.
  5. Repeat with the rest of the batter. Serve with avocado chutney.

Notes-

  • Finely diced onion, cilantro, curry leaves or celery also taste good in this batter.
  • Batter can be made ahead of time and refrigerated. Bring it to room temperature before making the vadas.

  1. This looks real good Sandhya. Love that appe pan you always use, it’s like an Indian muffin pan. Great that they are not fried too. So tell me, how do you grind it all? In a blender or a food processor? The addition of avocado not only provides the soft center, but also gives it a touch of green….clever gal :). Any big plans for Mother’s Day?

      I am so sorry to be replying so late….it has been such a busy time. Mother’s day itself was very busy with my volunteering activities at the Sunday school. Both my kids were away but had very thoughtful gifts and touching cards for me…they know how much their Mamma loves food and things around the kitchen:) My husband brought me roses and took me out for lunch on Saturday to my favorite seafood place. Were your girls home for mother’s day? I am sure your hubby and the girls made your day extra special too.
      Thank you so much for your sweet words about the Dal Vadas. I blended the mixture in a blender as the food processor leaves it a bit too grainy for it to come together. I use a minimum amount of water in the blender….just enough to blend it. I was just writing to Aruna of Aharam that I seem to be obsessed with avocados 🙂 But we love them and it is healthy so every time I go to Costcos, I grab another bag of avocados:) The corn and avocado really made a difference in both the taste and texture of the Dal Vadas.

      1. Loretta, can you believe your reply was deleted again? I have been trying to retrieve it.So glad that I had read it before it ‘vanished’
        I agree with you that we do not need a special day for our children to remember us and feel blessed to have these ‘good’ kiddies’ everyday.
        I put the avocados in the refrigerator once they are ripe and that has worked for a couple of weeks so far.
