See how ginormous the cantaloupe is? The peaches and apple are large sized but are dwarfed by the cantaloupe!

Have you seen the ginormous cantaloupes in the markets these days? I could not resist getting one. But once I got it home, I was wondering how I could get my family to eat so much cantaloupe! I usually get the normal sized ones and make the Fruit Chaat with the tangy yummy dressing.

Cantaloupes are rich in potassium, vitamins and fiber and have other nutritional benefits but that pitch generally does not work in persuading my husband to eat more of it….

So I thought of making a lassi to go with our dinner. I love a cooling lassi and often make Mango Lassi, Ginger Peach Kefir Lassi with Chia  or the Creamy Avocado Kefir Lassi. This time, I decided to use coconut milk. To the cantaloupe chunks, I added grated carrots for additional nutrition and color. The coconut milk gave it a yummy creamy richness. I added just a touch of honey as the cantaloupe was super sweet. For a vegan option, you can use brown sugar instead.

I am happy to report that it was well received. This dreamilicious lassi was perfect with our dinner on the patio at sunset! It would be equally awesome at a sunrise breakfast too.

Cantaloupe Carrots and Coconut milk Lassi

  • Servings: 4

Ingredients-

  • 2 cups peeled and seeded cantaloupe chunks
  • ¾ cup shredded carrots
  • 1½ tablespoon honey or brown sugar
  • ¾ cup coconut milk
  • Ice to serve

To make the Cantaloupe carrots and Coconut milk Lassi

  1. In a blender, blend all ingredients except the ice.
  2. Add the ice in glasses, pour lassi over it and enjoy !

  1. What a delightful combo lassi Sandhya. I love the addition of coconut milk here. Did you use the powered form or canned? I’d never have thought of anything like a cantaloupe to be enjoyed just on it’s own, but here you’ve demonstrated how you can use it in a lassi and I’m sure milk shakes would be wonderful too. Thanks for the large cantaloupe tip, I see them in the markets these days, but always hesitant to buy them just in case they aren’t sweet enough. Great shots in your garden, always love those!

    1. Thanks so much Loretta. I used 1/4 cup of coconut powder to make the milk. But I got feedback after the overnight oats recipe that giving the amount of coconut milk is more helpful so specified that this time. The carrots and cantaloupe went very well with the coconut milk. My biggest and most honest critic, my husband liked it and he does not like cantaloupes . It is so funny how we measure our success:)
      We love sitting out on the patio in the evenings. I know you and husband do too.
