You all know I go nuts for coconut and this ladu is at the top of my list of favorites. It is a combination of roasted semolina, fresh grated coconut, sugar that is infused with cardamom and nutmeg and studded with golden raisins. The coconut makes the otherwise plain rava ladu moist and tasty.

My Aai (mom) made the best Raghavdas ladus. As a new bride, I had to make Raghavdas ladus on my own, at Diwali time. I was quite nervous. I followed Aai’s recipe and was thrilled when my mother-in-law showered me with compliments.

I became lazier as the years went by and started using Angel flake sweetened dry coconut that is used in desserts. I am very happy with the results of my shortcut, so have continued using this recipe for many years now.

The biggest challenge for most people is the sugar syrup. It is called a one thread consistency syrup (ektari paak in Marathi) It can be checked two ways-

  1. When poured from a ladle, you will see it fall in a single thread. If it is undercooked, you see it fall in drops. If overcooked you will see it fall in two threads.
  2. When you take a drop of the syrup between your thumb and forefinger and pull the fingers apart, you will see one thread formed in between.

I made it in my microwave this time so I could time the syrup making for you. Your timing may vary slightly based on your microwave and of course the amount of sugar syrup you are making.

Raghavdas Ladu- Microwave recipe!

Ingredients-

  • 1 cup rava/ semolina/ cream of wheat
  • 1 tablespoon butter or ghee
  • 1/8 cup hot milk
  • ½ cup Angel flake sweetened dry coconut, whirled in the food processor
  • ½ teaspoon cardamom seed powder
  • 1/8 teaspoon nutmeg powder
  • A pinch of salt
  • ½ cup sugar
  • ¼ cup water
  • 1 tablespoon golden raisins

To make the Raghavdas ladu

  1. In a microwave safe bowl, combine the rava and the butter or ghee, rubbing it in with the finger tips. Microwave for 2 minutes stirring once in between. Remove from the microwave, stir and microwave again for 30 seconds. Total time to roast the rava – 2 minutes and 30 seconds.
  2. Drizzle the hot milk over the roasted rava and fluff the rava using a fork. Remove any lumps and remove to another plate or bowl.
  3. Whirl the dried sweetened coconut shreds in the food processor to resemble the size of fresh scraped coconut. Measure it to be a ½ cup after whirling in the food processor. Add to the rava .
  4. Add the cardamom and nutmeg powders and a pinch of salt. Mix and set aside.
  5. In the bowl, add the sugar and water and stir until the sugar dissolves. Microwave for 2 minutes, stirring once in between. Check the consistency of the syrup. Microwave for another 30 seconds.

Tips to check consistency of syrup-

  • When poured from a ladle, you will see it fall in a single thread. If it is under cooked, you see it fall in drops. If overcooked you will see it fall in two threads.
  • When you take a drop of the syrup between your thumb and forefinger and pull the fingers apart, you will see one thread formed in between.
  1. Add the rava mixture, stir very well to combine and leave it covered for ½ an hour or so. The rava will absorb all the extra moisture and become soft.
  2. Mix well, add the raisins and roll medium sized balls into ladus.
