Did you all hear about the snow blizzard in the Boston area last week? Then you will understand my exuberance for the Makar Sankranti festival this January 14th.  Makar Sankranti is here to tell us that the days are starting getting longer and that spring has begun…well…. in India for now, but I can hope that we are not far behind.

Makar Sankrant – a festival of India talks about this joyous festival. Haldi kumkum gatherings are part of the festivities and a fun occasion for women to get together and exchange gifts and sweets….even if it means donning a beautiful saree but having to wear boots to climb over the snow banks 🙂

Sweets made of sesame seeds and jaggery are made and I am so happy to see and hear positive feedback from so many of you who have made  the Tilachi Vadi- A Makar Sankranti Special Sweet, Microwave Sesame Seed Laddus in 1 ½ minutes and the Food Processor Tilgul- No cooking required.

I hope this Crispy Crunchy Til Chikki is another addition to your repertoire. It is made of just 4 ingredients-sugar, sesame seeds, cardamom powder and salt. It cooks super-fast, so make sure all the ingredients and the equipment needed is lined up- mise en place is absolutely needed for this recipe!

Crispy Crunchy Til Chikki

  • Servings: 40

Ingredients-

  • 1 cup white sesame seeds
  • Pinch of salt
  • 1 teaspoon green cardamom seed powder
  • 1 cup granulated sugar
  • Pistachio slivers and edible rose petals (optional)

To set the Crispy Crunchy Til Chikki-

Flat cookie sheet or board lined with parchment paper, another piece of parchment paper and rolling pin.

To make the Crispy Crunchy Til Chikki-

  1. Sprinkle the parchment paper lining with pistachios, rose petals (optional)
  2. In a pan over low heat, dry roast the sesame seeds, stirring them a few times. When you hear them sizzle pop, they are toasted- about 5 to 6 minutes. Remove from pan. Let them cool. Add the salt and cardamom seed powder. Set aside.
  3. In the same pan, add the sugar. As it melts you will first see it start lumping up, keep stirring in between and then you will then see it melting to a golden brown caramel color. (see photos above)
  4. Shut off the heat, add the sesame seed mixture and mix well. Immediately pour onto the tray lined with parchment paper, top with the other parchment paper and quickly roll it thin with the rolling pin.
  5. Make shapes or square markings, let cool and then break into pieces.

Note

In place of parchment paper, ghee could be used to grease the cookie sheet and the rolling pin.

Tilgul ghya goad bola- literally translated it means “Take this sweet made of sesame seeds and speak sweetly to me” But the larger meaning behind it is to build and renew friendships!   1. I think I’ve had a little something like this before, they were so good! I’m going to give them a try next month (there is a weight loss challenge starting Monday at work). Yum!

  2. There are so many festivals in India aren’t they? Wow what a treat these heart-shaped chikkis are. I like that they are slender and not tough to bite into either. What does Til mean in Hindi? I hope your weather is improving. We were up to 65 yesterday and raining all day, but hey! I’d rather that than snow. So now not a trace of snow around. Yippeeeee! I hope you get a nice break too.     1. Thanks so much Loretta. Yes there are so many festivals in India. Sesame seeds are called til in Hindi. We had some warm weather and then the biting cold winds but most of the snow has melted!

    1. Thanks so much. Looking into specific foods made for certain Indian festivals is fascinating to me. Sankranti being a winter festival, sweets made of sesame seeds and jaggery are made. According to Ayurveda, both these ingredients are said to have a warming effect on the body.
