Mexican food is very popular here and even more so among us Indian Americans. It is a match made in heaven for the Indian palate with its use of spices, chili peppers, cilantro, onions and tomatoes. Don’t you think that the Pico de gallo is just like the Indian koshimbir or kachumber ?

Little surprise then that over the years my Mexican cooking has morphed into an Indo Mexican cuisine which my family loves. So I tried various fusion ideas blending Indian and Mexican cookery and they have been popular with our friends and family. In true Indfused style, they are healthier and easy to make and use local ingredients.

My favorite dish to order at a Mexican restaurant is the chili rellenos but often it comes dripping in oil. So I started making these Chili relleno bocados that have satisfied my craving. They are so easy to make too!

And who does not love avocados? In our home, it has become a necessity 🙂 This Avocado Relish is a big hit at parties. I substitute grapes for the cranberries in the summer time.

  2. Wow, what a wonderful platter of dishes. All of the dishes look super yum, especially loved the cheesy broiled peppers .Wonderful view of the woods from the patio as well !
