Boston is experiencing a heat wave this summer. I complain all through winter when I wait for warm weather, so I am not complaining now.

This is my kind of weather for summer salads. These unique, figure friendly, all natural salads with homemade (read- no preservatives) salad dressings are perfect for dining on the patio or for any summer parties.

I made the Corn Bhel Salad yesterday evening. Those grilled ears of corn scream summer and are so flavorful. I found the perfect mangoes for this salad at Whole Foods. Adding plenty of veggies makes this such a figure friendly, fiber rich salad. It goes very well with grilled fish.

When life gives you hot, humid days, sprout some legumes! I sprouted mung beans to make this scrumptious salad and will combine it with any fresh summer veggies and fruit I find at the farmer’s market. I am crazy about this dressing for the Sprouted Mung Bean Salad Bowl too.

Have you tried cooked mung dal in your salads? It adds protein, a nutty taste and is easy to digest. I like juxtaposing it with shaved Brussel sprouts and pomegranate arils in this Shaved Brussel Sprouts, Mung Dal and Pomegranate Salad.

    1. Ha ha yes Loretta. I will take the heat over that bitter cold winter any day. I complain so much in the winter that I try to keep my mouth shut in the summer 🙂
