Spring really puts a spring in our step, doesn’t it? I especially enjoy the longer days but it is still cold here. So, a warm dinner with the flavors of spring, is perfect for this time of the year. Many of my friends ask me about putting together an Indian dinner asking what would go well together. So here is an Indian dinner menu that I love.

The Easy Peasy Spring Pullav combines the fragrance of the Basmati Rice with green peas and a hint of mint. It is a light yet scrumptious rice dish. You can also make the pullav with quinoa or brown Basmati rice. The cooking times will vary, of course.

The Pullav pairs up very well with chicken curry. The Murg Saagwala is chicken with spinach. Once the chicken is marinated, this streamlined recipe comes together in 15 minutes!

To round up the dinner, I serve it with the Figure Friendly Creamy and Cool Onion Raita.

Roti also goes well with the Murg Saagwala and the raita. Rotis can be made in advance and stored in the refrigerator for 3 to 4 days. I warm them up on a griddle just before serving and they are super soft and luscious again.
