5 ingredient, easy Mango Kulfi ice cream that is truly ambrosial!


What could be more relaxing than friends catching up over lunch? It is so good for the soul and the tummy too, don’t you think? I am part of a multi cultural group of friends and we get together for potluck lunch every now and then. There is no planning about who gets what and yet the array of food is astounding each and every time.
I had fun hosting it this week. Being the only Indian American in this group, I tend to share Indian food. So in true Indfused style, I made the Murg Saagwala, aaloo matar, koshimbir with yogurt dressing and Mango Kulfi Shooters, all with my healthier and streamlined recipes.
I have shared my easy Summer Special Mango Kulfi with you back when I started blogging in 2014. It is an absolute favorite of mine and it never fails to impress. I will never forget the feedback I got for this recipe from a woman who is not much into cooking, but wanted to impress her Indian in-laws and friends. She herself is not Indian. She announced that she had made Mango Kulfi for them and saw eyes rolling 😉 But not only were they amazed by Indfused’s kulfi they asked her for the recipe!!
Kulfi shooters are a fun way to serve kulfi! The Mango Kulfi can be unmolded and eaten on a stick or served with spoons- either way it is super delectable! I served it with a cup of chai, of course!

Sounds like a great summer treat. I’m glad I don’t have to buy a bunch of fresh mangoes as sometimes they are hard to find. Mango pulp in a can? Interesting… 🙂

This mango pulp comes from Ratnagiri, India which is famous for its alphanso mangoes 🙂
