Mexican food is very popular here and even more so among us Indian Americans. It is a match made in heaven for the Indian palate with its use of spices, chili peppers, cilantro, onions and tomatoes. Don’t you think that the Pico de gallo is just like the Indian koshimbir or kachumber ?

Little surprise then that over the years my Mexican cooking has morphed into an Indo Mexican cuisine which my family loves. So I tried various fusion ideas blending Indian and Mexican cookery and they have been popular with our friends and family.
