Leftover Makeover- Cabbage Vadas in the airfryer

I soaked chana dal for 4 hours and then realized that I had soaked almost double the amount I needed.

So I ground it coarsely and set it aside. When I opened my refriogerator I remembered that I had 1/2 a cabbage head in there that needed to be used too. So I added shredded cabbage to the dal mixture along with some besan and fresh ginger and spices and airfried the vadas.

We absolutely loved how the vadas turned out super crisp on the outside and fluffy on the inside. We ate them with chutney but also used them for a lunch wrap.

Cabbage Vadas in the Air Fryer

servings= 20 vadas

Ingredients

3 cups soaked chana dal, ground coarsely

1 tablespoon ginger, grated

1/2 teaspoon turmeric powder

1/2 teaspoon chili powder

salt to taste

3 cups finely shredded cabbage

2 tablespoons besan or as needed to bind the vadas

1 teaspoon oil

1/2 teaspoon baking soda

Avocado oil spray

To make the vadas-

Mix all ingredients together and make round balls, about 1 inch in diameter.

Preheat the air fryer to 400 degrees

Spray a pan with the avocado oil spray.

Arrange the cabbage vada balls in a single layer. I made 2 batches of 10 vadas each. Spray the vadas lightly with the avocado oil.

Air fry the vadas for 9 minutes or until they are golden crisp on the outside and fluffy on the inside.

Enjoy with chutney or in a wrap.
