In a traditional Indian kitchen, some never-fail recipes are handed down from generation to generation. We will learn to make classic recipes like Rava sheera (sweetened semolina dessert with cardamom and nuts, Kobichi bhaaji (a delectable stir-fried cabbage dish from Western India); Tadka dal from Northern India (lentils cooked with tomatoes, chilies, and spices), served with steamed rice; and Onion and Spinach Pakora (finger-licking fritters served with store bought date chutney).

This menu is designed to inspire and teach participants to create memorable Indian-inspired dishes that elevate any holiday table. Emphasizing health-conscious cooking techniques like air-frying and combining traditional Indian spices with seasonal ingredients we will create dishes that are both elegant and nourishing. We will make two unique savory soups infused with fruity undertones.
Carnival Squash Soup- carnival squash with its mellow, sweet taste takes centerstage in this luscious soup. It is combined with red lentils, pears and delicately spiced curry powder.
Air-Fried Butternut Squash and Apple Bisque with Turmeric– A bisque, so flavorful and velvety that you will not miss the cream! Combined with aromatics and spiced with turmeric to create layers of flavor.
Roasted Vegetables with Garam Masala- Colorful medley of seasonal vegetables roasted with garam masala, featuring warm notes of cinnamon, cloves, and cardamom.

- Thursday January 16, 6 to 8:30 p.m. Indian Heirloom Recipes for Cozy Winter Bowls

With just the basics of Indian home cooking, we will create 2 scrumptious rice bowls with recipes that have been savored and passed down from generation to generation.
We will make Lehsuni Palak Daal, (lentils cooked with spinach, garlic and spices)
Chana Masala (chickpeas cooked in a delectable tangy sauce)
Basmati Rice (stove top recipe for fluffy, fragrant Basmati rice)
Onion Chutney Relish (popular restaurant style red chutney)
These hearty, protein rich, vegetarian dishes can also be made ahead and are sure to be on your regular meal rotation, just like they are on ours! All skill levels welcome.

We will make comforting Lehsuni Palak Daal (lentils with spinach, garlic, and spices) and vibrant Chana Masala (chickpeas in a delectable, tangy sauce), as well as fluffy, fragrant Basmati Rice and a zesty restaurant-style Onion Chutney Relish. These hearty, protein-rich vegetarian dishes can be made in advance and will be a great addition to your regular meal plan rotation.
