Pedha is an Indian fudge like sweet which conjures up images of all things auspicious. They are offered to the Gods during festivals and other happy occasions ( one example being victories over tough exams:)  and then shared with friends and family.  Modak, with its distinct and exquisite shape is said to be Lord Ganesha’s favorite. So today, on the auspicious occasion of Ganesh Chaturthi, this is a special post for Pedha Modak!

Traditionally Pedhas are made from khoa or khava, which is milk that is boiled and stirred and stirred until it is reduced to a coagulated solid. Simply said it is a labor intensive and time consuming process.

Bhel is a very popular street food, especially in Pune and Mumbai, India. You are sure to find a bhel cart in and around picnic places like  parks, beaches, and old forts with hiking trails. It draws a huge crowd of people , and it is with awe that one watches the ‘bhelwala’ mix each bhel to order!

So here in America, I started packing bhel for our summer picnics, with the dry and wet ingredients ready to be mixed on site, and the concept of bhel in a bag was born! So as soon as the weather got warm this year, we headed off to the harbor islands with our favorite picnic menu – bhel in a bag, chutney and cucumber sandwiches, cut watermelon, and corn on the cob!

Eggceptional Egg Pullav Eggceptional Egg Pullav

Why is this Egg Pullav exceptional, you ask? Simply for it’s taste and for it’s versatility! It can be served by itself, with just a side salad, or it could be part of a fancy dinner menu. Either way it carries itself very well and makes a fantastic and lasting impression. Additionally, most of the ingredients needed for this recipe are ‘regular’ ingredients found in most of our homes yet they come together to make a sumptuous pullav.

Using a readymade biryani or pullav masala makes the task even easier, but if you do not have the masala on hand, you can use  peppercorns, cloves, cinnamon, bay leaf and the green cardamom as I did in the Bejeweled Basmati rice.

So here are the ingredients-

  • 1 cup Basmati rice cooked with 2 cups of low fat, low sodium natural chicken stock. I used Trader Joe’s
