A modern take on the classic Zunaka Bhakri makes for a healthy, scrumptious, quick and easy weeknight meal.

Zunaka bhakri is the absolute robust, down to earth, tasty food of Maharashtra, India. The protein rich, gluten free Zunaka is made with greens and besan (chick pea flour).Bhakri is a flat tortilla like bread made typically of freshly ground jowar flour, which is not available here.
Sprouted grain pitas reminded me of the wholesome bhakri. So I decided to try them with the 7 minute Broccoli Zunaka! The healthy broccoli that is so tender crisp in this recipe, makes it moreish. Zunaka in Sprouted Grain Pocket is a healthy, scrumptious and wholesome meal that reminded me of enjoying warm and toasty bhakri with zunaka and its accompaniments. I served it with spicy garlic chutney, crunchy fresh onions and radishes and dahi kanda, all yummy compliments to the zunaka bhakri.
Dahi kanda is sliced onion combined with yogurt, a touch of salt, sugar (if the yogurt is sour) and cilantro. Get the recipe for Indfused’s protein rich, healthy, 7 minute Broccoli Zunaka here.
Toast the pitas, cut in half and stuff with the Broccoli Zunaka, add let everyone add their own accompaniments!

Zunka Bhakkar is one of my favourite post trek meals. In fact, it is the carrot that gets me to the top quickly. 🙂 I like your fusion version which is so close to the authentic one.
