Chunky Sweet Potato Soup

Spring seems to be SO far away! As I write this, we have had a major snow storm. Check out this view outside our side door. Those branches bent under the heavy wet snow belong to our 10 feet tall Rose of Sharon.

We ย have no electricity, phones or wi-fi. and spoiled as we are with all the modern conveniences, we seem to wander around the house not knowing what to do …until we realize we betterย  start digging ourselves out ๐Ÿ™‚

So I was able to cook this hearty, vegetarian, wholesome Indo Mexican soup that will keep us warm and full too.

As I made several soups for our family over the years, I have discovered that cooked masoor dal is my favorite โ€˜go toโ€™ soup base. ย It is vegetarian, vegan, gluten free, all natural, boosts the protein content, adds texture and taste, cooks super-fast and whisks smooth. It also infuses whatever flavors you add to it. I add turmeric to it for an extra health boost! ย Also, you can cook a big batch and freeze individual portions so you have this soup base ready at your fingertips when you need it. Isnโ€™t that fabulous?

I added sweet potato chunks, black beans, corn and our favorite Mexican flavors like chipotle in adobo and cumin powder to it this time. Tender cooked crisp zucchini, avocado, scallions and tortilla chips top this soup to add texture and fun!

In true Indfused style, this soup is loaded with healthy, locally available ingredients, is filling yet light and super scrumptious!

Chunky Sweet Potato Soup

  • Servings: 4

Ingredients-

  • 1/2 cup masoor dal/ red lentils, washed and drained
  • 3 cups water, divided
  • ยฝ teaspoon turmeric powder
  • Sea salt as per taste
  • ยฝ cup peeled sweet potato cut in ยฝ inch cubes. I used Trader Joes organic sweet potatoes
  • 1 garlic clove finely minced
  • ยฝ cup corn kernels, fresh or frozen (defrosted)
  • ยพ teaspoon roasted cumin seed powder
  • ยฝ teaspoon chipotle in adobo (or to taste)
  • 1 cup cooked black beans home cooked or canned low sodium black beans. I cook a big batch and freeze in small portions in freezer bags.
  • ยพ cup cubed zucchini
  • Juice of 1 lemon
  • Sliced avocado, scallions and tortilla chips for topping

To make the Chunky Sweet Potato Soup-

  1. In a sauce pan combine the masoor dal with 2 cups of the water, turmeric and sea salt. Cook over medium heat. When the water comes to a boil, reduce heat and cook partially covered until the masoor dal is cooked, about 10 to 12 minutes. I cook this soup base in a large batch and freeze in smaller portion sizes, so I have this healthy soup base at my fingertips for many of Indfusedโ€™s soups. Whisk with a wire whisk so the mixture is smooth and silky, taking care as the mixture is hot.
  2. Add the additional 1 cup water, turn up heat to medium, and add the cubed sweet potato and the minced garlic. Let it cook until the sweet potato is soft but not mushy.
  3. Add the corn kernels, let cook for 2 minutes and then add the cumin seed powder, chipotle in adobo, black beans and zucchini. Cook until the zucchini is just tender crisp, about 2 minutes or so.
  4. Add the lemon juice, stir and serve topped with the sliced avocado, scallions and tortilla chips.
  5. Enjoy!

  2. Oh my Sandhya!! Whenever I hear how New England is being zapped with all that snow, my thoughts immediately turn to you. The 3rd Nor’easter of the season? We were supposed to get a bit of that last night too, but it just ended up raining. You poor things! The soup definitely looks like it would have done the trick for me with all that snow. It’s so colorful, nutritious and comforting. I love red lentils too. Great idea to just cook a batch and freeze it in portions. I cooked some last night with cabbage, would never have thought to put those 2 together, the results were amazing. I saw that you had another foot or so last night? Gosh when will it end eh? By the way, your Rose of Sharon will bounce right back, they are the hardiest bush I know. A lovely view with all that snow too, looking from the inside.

      We cannot believe spring is round the corner! We sure will enjoy it even more. I took some pictures of the snow this morning. Looks beautiful!
      On the positive side, everyone is home together during such huge storms, enjoying the warmth and food.
      This time the snow was not wet and heavy like the last time and we did not lose power….and the Rose of Sharon has already picked itself up!

    Tempting click is pushing me to the kitchen to make the soup with masoor dal as a base. Never tried, even adding of sweet potatoes! I can live on soups and salads like these.
    May be I am not lucky to get those Mexican flavors here, will manage with Indian ingredients .

I don’t enjoy too much snow or winters just like you and prefer the heat instead. This certainly was not something anyone anticipated and hopefully all of you sailed through it just fine.   15. That’s one hearty and filling soup Sandhya, just love it can be a comforting meal on its own. Adding avocado on top is like an extra treat. Though the weather in Mombasa never gets cold to the point where I need a sweater, a little bit of rain and my soup making begins! That’s the only way we can enjoy hot soups in a hot country.
