Tandoori Salmon Pizza! Tandoori Salmon Pizza!

Dear friends,

You know how you get excited to try out a  creative that has been floating in your head? Well this Tandoori Salmon Pizza has been ‘swimming’ in my head for quite some time now but I had not been able to make it.

As you know, I love fish and cute fish shaped things- you will find plenty of platters and fish décor in my home. So I wanted to make my pizza fish shaped too. I am not a huge fan of salmon, but know that it is good for health and want to incorporate it in our diet. Honestly, the Tandoori Salmon tasted even better than I anticipated, which was a welcome surprise. It can be a meal by itself.

Tandoor, by the way, is an amazing clay oven used in India, which I wish I had. I do have a home style tandoor that my mother had…

Grilled Naan Pizza with Chutney and Corn

Friends,
A quick and easy meal during the busy holiday time that is loved by the entire family too! How often does that happen?
In wintertime, I bake the naan on a pizza stone in a 400 degree Fahrenheit oven following about the same timing for baking as I do on the barbeque grill in the summer.
Enjoy the ease of a quick and delicious meal!
Wishing you all Happy Holidays!
Love,
Sandhya

Do you love the ease of super quick grilled food in the summer? I definitely do! And as summer starts winding down, I take every opportunity to enjoy the outdoor grill and the summer bounty.

That is how the Grilled Naan Pizza came about. This is an easy, no fuss, meal that is simply scrumptious! The corn topping is a combination of Indian and Mexican flavors. The addition of the fresh summer tomatoes, cilantro and red onion gives this pizza a definite oomph!

I started by preparing the corn topping. You can use fresh corn on the cob, grill it and remove the kernels or use frozen defrosted corn and roast them in a teaspoon of oil, in a pan. Then add the cumin seed powder, red chili powder, sea salt, brown sugar and lime juice. Mix.

You all know that I am going crazy with my aape pan! The charm of eating my favorite fried foods using just a couple of drops of oil, is very alluring to me.

I  made dosa batter for my children who love dosas. So when my husband, who loves aappe, was looking for a quick bite before dinner, I thought of giving this appetizer a try, using the same batter. Psst…I love jalapeno poppers and was hungry too 🙂 Needless to say, it was an instant hit and loved by all!

Talk about eating healthy! Traditionally the day after Ganesh Chaturthi is Rushi/Rishi Pancahmi – a day to remember the great Indian sages (Rishis) and eat like the Rishis did in the forest! So after a day of feasting, the next day is supposed to be spent eating tons and tons of greens ,root and other vegetables cooked together in this absolutely delicious and very filling stew, called kandamool !
