Roasted Cauliflower Steaks topped with a tempering of mustard seeds, paprika and maple syrup is an Indian fusion recipe that is absolutely divine!

Cauliflower steaks have been all the rage, haven’t they? I have always liked roasted cauliflower but my husband never cared for this cruciferous vegetable in any form. So, you can imagine his reaction when I said that I will be making cauliflower steaks! He had not even heard of such a thing!
Undaunted by his reaction, I decided to experiment, thinking that I could easily eat the whole thing myself. And without any guilt too, right? As it turned out, the roasted cauliflower steaks tasted so yummy that he did eat some and I was sad that I had to share 🙂
It is a super easy recipe and the tempering turned out to be so delectable that this is a recipe I will make again and again! This Indian fusion savory, sweet and fragrant tempering is finger licking good! You can serve it with a raita like Peanut Butter Crunch Raita or a Destination Spa Salad
Cauliflower Steaks with Spices and Maple Syrup
Ingredients-
- 1 head of cauliflower
- 1 ½ teaspoons olive or coconut oil
- Sea salt to taste
For the tempering-
- 1 teaspoon coconut oil
- ½ teaspoon brown mustard seeds
- ½ teaspoon Spanish paprika
- 1 teaspoon amber pure maple syrup
- Pinch of sea salt
To make the Cauliflower Steaks with Spices and Maple Syrup-
- Preheat oven to 350 degrees Fahrenheit.
- Wash and dry the cauliflower. Remove the outer leaves and trim the stem. With the cauliflower upright on the stem end, cut 4 to 5 vertical steaks, depending on the size of the cauliflower.
- Brush it with the olive or coconut oil and sprinkle with salt.
- Bake in the preheated oven for about 18 to 20 minutes or until the cauliflower is roasted and the edges look crisp.
- Heat the oil in a small pan for the tempering. Add the mustard seeds. When they start to splutter, remove from heat and add paprika. Add the maple syrup and stir.
- Remove the roasted cauliflower to a serving platter. Brush the steaks with the tempering mixture and sprinkle with a pinch of salt.
- Serve with a raita like the Destination Spa Salad or the Peanut Butter Crunch Raita.

Looks interesting and definitely exotic from the Indian perspective. Maple sauce is not very popular here except one can get it at a few cafes with waffles.

Truly a work of art on this plate Sandhya! Well done, it looks amazing and would probably have won first prize in any competition! I’ve seen these cauliflower steaks here and there, but have never really tried it. You are giving me some great ideas here – I love the maple syrup sweetness with the rest of the spices. The steak makes for a great presentation too and easily enjoyed at a dinner party I’m sure. Great post!
