Easy, healthy and scrumptious Indo-Mexican fusion meal perfect for Spring entertaining or to enjoy with your family!

April has a special place in my heart….as it takes me back to when my son was born. It is indeed magical how Mother Nature seems to take a paint brush in hand and in one stroke the dormant trees, shrubs and bushes come alive! And then viola! The vibrant colors of spring are all around us…..truly worth the wait to see all that awakening around us. I never get over this miracle of nature, year after year. And then there is my son’s birthday, the Patriots day re-enactment in our town and the Boston Marathon all in April. Yes spring does arrive with a bang for us!
I love going for walks at this time and there are so many trails in our walk able, historical town that are truly worth exploring. So if I have my prep work for cooking done, I can join my friends for a walk anytime…or perhaps a bike ride on the serene bike path.
This is an easy, mouthwatering and healthy meal I like to put together –One pan Chicken Vindaloo Tacos

served with the Easy Peasy Spring Pullav.


The Cranberry Avocado Relish is always a hit, and grapes can be substituted for the cranberries this time of the year.
Last year my daughter gave me the Magic Bullet Dessert Bullet which I use for this vegan, gluten free, 4 ingredient Mango Banana Ice cream.

Or dessert and breakfast!

Starting my garden is my fave activity in spring other than having more things outside to photograph. Oh those tacos though 🙂 🙂

Thanks so much Teri. Sorry about my delay in replying-the flu got me this time. Our area had round 1 of the flu epidemic in November which I had escaped but who knew there was round 2 in April? 🙂

I love growing my own veggies and herbs. Last year I had more hot peppers than I knew what to do with! Sorry about the flu, hope you are well mended now 🙂

All the dishes look so vibrant and appetizing. My personal fav would probably be the tandoori chicken followed by the mango ice cream. 🙂 I keep looking and waiting for the weather to warm up and stay warm. It has been like a yo-yo lately and real hard to predict what I can and cannot do in the garden. Your post has surely got me excited though Sandhya – spring will definitely be here to stay in the not too distant future:)
